I'm still in shock (although partly from sticker-shock).
Last night I was served a glass of wine (champagne flute) to identify 'blind'. Excellent balance, persistent mousse, strange colour (could have been a rose, or heavily oxidised, but the lighting was subdued), and very creamy. Alcohol in balance.
But the strangest attribute was that the bubbles seemed to collect at the surface - almost leaving a layer of cream.
Indeed this was a Belgian beer named DeuS. Easily the best beer I've ever tasted (but I'm not particularly an afficionado). And apparently it undergoes a secondary fermentation in bottle in some place called Epernay (which, of course, isn't even in Belgium).
Not available (currently) in Canada - but thought some others on this board may have impressions (or a yen to try something 'completely different').
