I've been doing this for years with a table grape called Steuben. It's a great match for Thanksgiving dinner.The wines have a unique purpose on the table. They have tannins like red wines that match food, yet the spectrum of flavors stays white. People find an affinity with autumn flavors like squash or sage, perhaps because of the color.
