2005 Arbois Rouge Domaine André & Mireille Tissot Trousseau "Singulier" (Bio-dynamic)

Outstanding wine shared with an old friend at Chez Papa on Potrero Hill last night (really enjoyable restaurant!)

Started out with that high acidity, tart "cranberry/red currant" flavor that I at least enjoy. Over the evening, though, it smoothed out and become richer and earthier and smoother while not losing its freshness. It accompanied very well our lamb and steak. If I was still giving ratings, I'd give it 17.5/20 easily Very recommended.

Great to see this note (and I couldn't resist googling Chez Papa - can't wait to get back to SF to try it - looks really casual/good!).

Trousseau Singulier from Stéphane Tissot was the very first Trousseau I'd ever tasted that had real depth of flavour and richness ... the only one that gets close is Puffeney, but that's on another wavelength really with perhaps more subtlety, but less intense. Of course the benign 2005 vintage helped, but how does Stéphane do it? Mainly in the vineyard I reckon with lower yields than almost anyone else as well as his farming techniques, but he also studies and trials the use of oak in a really New World way - i.e. every year he reassesses, questions, reviews his oak and his handling from fruit to bottle - he is a real passionné, though others would say a fou!

I was hoping you would comment on this post, Wink! If Otto is the resident Musarholic, can I be an Arboisphile? :)

Have not tried the Puffeney Troussard. Have to admit that I did like the Tissot Poulsard better than the regular Puffeney bottling of same. (Although the latter was still tasty). I like the high acidity reds, the "sour" fruit. Someone posted a note dismissing a Tondonia bottling because of the sour cherry, which is why I rated the wine so high! :twisted:

Have not tried Vin Jaune yet, though :?
