Wine Variety Suggestions for Prime Rib

Christmas dinner we always serve Prime Rib. Family Tradition.

I have served or quaffed different varieties of red wine [usually Cabernet Sauvignon] with this dish, but would like to know what you would serve.

I'd stay with tradition and serve Cabernet Sauvignon. I love a good prime rib and its what I prefer. You could always go with a cab-based Bordeaux.

Chianti and other Tuscan reds do well with beef, too.

I prefer Vosne-Romanee, or bigger Cotes de Nuits Pinots like Gevrey-Chambertin, or Marsannay. But of course I'm not much of a Cabernet Sauvignon drinker and rarely does it grace my table.

Pinot Noir is another wine variety I have served with PR, usually an Edna Valley, but the Tuscan suggestion sounds interesting, too.

Cab is my personal favotite with beef as well, Howie. Never tried a Bordeaux with PR [though I did have an excelent Bordeaux with a Porterhouse/T-bone steak once; rare and nicely charred] but I can definately see myself pouring a well aged bottle for my guests. Thanks!

I'd go with mature Bordeaux. Or mature Hermitage.
