WTN: 2000 D'Agassac

My third and final bottle. When first opened, the color was dark purple, the aroma was smoky, mineral, and cherry. So far, so good, and so much of an improvement over the first two bottles consumed a year and a half ago and beyond. A little thin on the palate, but showing good acidity and fruit and drinking nicely with a simple dinner of grilled salmon, sauteed brussel sprouts with Pecorino, and baked potato. But wait.....a couple of hours later, the remaining wine in my glass turned extremely acidic with a tart finish that camouflaged any other characteristics. I almost got to enjoy it.
