Aaron,

I've tried several cru Chablis from several vintages and I, also, have never been impressed. Not enough meat on the bone for me. For a real treat, head on over to Puligny-Montrachet. The Batard is the best white wine I have ever tasted. Plenty to get excited about there. Unfortunately, it comes at a high cost.

Aaron,

Hope the likes of Joe haven't turned you off Chablis altogether.

To further illustrate Mr. Perry's known bias - the guy also hates (with a capital "h") Cabernet Sauvignon!

To answer your question - Chablis producer's (I've tried) worth seeking out are -

First Rate - generally extremely good and reliable

Raveneau
Fevre
La Chablisienne
Rene and Vincent Dauvissat

Second Tier - can be good, sometimes not

Jean-Paul Droin
Laroche
Joseph Drouhin
Verget
Pinson
Louis Michel
Servin

Like Walt, anything from France and 2003 is totally off my radar, too!
Cheers,

David

Awesome, David, thanks for the recommendations!
